- Cashews (chopped) - 2 to 3 tbsp
- Almond (chopped) - 2 to 3 tbsp
- Milk (full cream) - 1/2 litre
- Cardamom powder - 1/2 tsp
- Beetroot - 1 inch
How to make Guava Pudding/Halwa
Take a broader pan and add a ½ litre of full cream milk in it and boil it. Take 4 medium sized guavas, remove their stalk and chop them into the larger sized pieces. Stir the milk in intervals.
After the milk has boiled well, stir it and make sure it doesn’t touch the bottom of a wok. Add the chopped pieces in the pressure along with an inch piece of beetroot and close its lid. Boil them until the first whistle blows.
Switch off the flame after the first whistle has blown and wait until its pressure releases. Open the lid of cooker after its pressure has released and pour the boiled guava in a serving bowl.
Keep it aside to cool down and after cooling it, grind in the grinder jar for the paste. The Mawa is forming very quickly so turn the flame to low. The Mawa has cooked after 20 minutes so turn of the flame.
Filter the ground paste of guava in a strainer to separate its seeds. Preheat a pan and add 2 to 3 tablespoon of clarified butter in it. After melting it, add 1 to 2 tablespoons of chopped almonds,1 to 2 tablespoons of cashews to it and roast them on the medium flame for 3 to 4 minutes.
Add the filtered pulp to the roasted dry fruits. Add a cup of sugar to it and cook till sugar dissolves with it. The sugar has dissolved after 3 minutes. Add the cooked Mawa to it and roast while stirring it for 3-4 minutes. Add a ½ teaspoon of cardamom powder to it and mix it.
The pudding has reached to its thicker consistency, it has cooked so switch off the flame and pour it in a serving bowl. The guava pudding is ready to be served. Garnish it with finely chopped dry fruits and serve it.
You can store it in the refrigerator and consume for a week.
Suggestions
You can use 125 gms of readymade Mawa or 100 gms of milk powder instead of 1 litre of milk.
You can increase or decrease the number of dry fruits according to your taste.
