Watermelon Rind Curry
We eat the sweet red part of a watermelon and throw away the rind, But if we make a dish using the rind of a watermelon then it tastes delicious.
Ingredients for watermelon rind curry
Watermelon rind- 1.5 kg
Coriander leaves (Dhaniya) - 2-3 tbsp (Finely chopped)
Oil - 2 -3 tbsp
Ginger paste (Adrak paste) - 1 tsp
Green chilly (Hari mirch) - 2 to 3 (Finely chopped)
Asafetida (Hing) - 1 pinch
Cumin seeds (Jeera) - ¼ tsp
Red chili (Lal mirch) - less than ¼ tsp
Garam masala - less than ¼ tsp
Turmeric powder (Haldi powder) - ¼ tsp
Dried mango powder (Amchoor powder) - ¼ tsp
Coriander powder (Dhaniya powder) - 1 tsp
Salt (Namak) - ¾ tsp or as per taste
How to make Watermelon Rind Curry Recipe
Remove the dark green part from the top of the watermelon rind. Cut the thick green pulp into small pieces.
Add oil to a pan and let it heat. Once the oil is hot, add cumin seeds to it and roast a little. Once the cumin seeds are roasted, add asafetida, ginger paste, green chilli, turmeric powder and coriander powder to it and roast. Now add the pieces of watermelon rind to it. Add salt and red chilly powder as well. Cook the watermelon pieces along with all the spices for about 2 minutes. Make sure the coating of all the spices comes on top of the watermelon pieces. Add ¼ cup water to it. Cover the dish and let it cook for 5-6 minutes on low flame.
Using a spoon, mix the dish properly. Once again rind the dish and let it cook for another 5-6 minutes and then check. If the water has dried then add more water to it. Make sure to keep checking the dish after every 5 minutes. Once the watermelon pieces become soft, add garam masala, dried mango powder and coriander leaves to it and mix well. The watermelon rind curry will be ready in 25 minutes.
Take out the sabzi in a bowl and garnish it using coriander leaves. Watermelon rind curry can be served along with chapati, paratha or rice.
Serving - 4-5 members
Time - 25 minutes

Nisha ji agar ye recipi cokar mai banayenge to kitni siti lagani hongi निशा: रेखा, ये सब्जी कुकर में बहुत जल्दी बन जायेगी, 1 सीटी आने के बाद गैस धीमी कर दीजिये और सब्जी को धीमी आग पर 5 मिनिट तक पकने दीजिये, अब गैस बन्द कर दीजिये और कुकर का प्रेशर खतम होने के बाद सब्जी कुकर से निकाल लीजिये, सब्जी बनकर तैयार है.
