Govind Gatta Curry is a rajasthani dish. The dish of govind gatta is made on special occasions that is on some festival or for some party.Ingredients required for the dish of Govind and GattaIngredients to prepare the dough of gattaGram Flour (Besan) - 1 cupCarom seeds Ajwain - Less than ¼ tspSalt (Namak) - ¼ tspRed chili (Lal mirch) - 1 pinchIngredients required for the gatta stuffingSolid milk (Mawa) - 100 gramSalt (Namak) - Less than ¼ tspRaisins (Kishmish) - 1 tbspCashewnuts (Kaju) - 6 to 7Black pepper powder (Kali mirch powder) - 2 pinchIngredients required for making the gravyCurd - 1 cupTomatoes - 2 Ginger paste (Adrak paste) - 1 tspOil - 2 tbspCumin seeds (Jeera) - ½ tspAsafetida (Hing) - 1 pinchTurmeric powder (Haldi powder) - ¼ tspCoriander powder (Dhaniya powder) - 1 tspKasuri methi - 1 tbspRed chilly powder (Lal mirch powder) - ¼ tspSalt (Namak) - 1 tsp or as per tasteGaram masala - ¼ tspCoriander leaves (Dhaniya) - 2 tbspHow to make Govind Gatta curryTake gram flour in a bowl. Add oil,curd,salt, red chilli powder to it. Mix everything well. Add 1-2 tsp water if it appears dry. Knead the dough. The dough should be a little soft in comparison to the dough of a poori. Cover the dough and keep it aside for 20 minutes, the dough will set and rise. Make stuffing for Govind GattaTake half the mawa and crumble it with your hands. Add salt, black pepper and coriander leaves to it. Cut the cashews into tiny pieces. Add the cashews and raisins to it. Mix everything properly.Prepare Govind GattaApply oil on your hands and knead the dough a little more. We will prepare 8 balls from this much dough. Take each ball in your hand and press it till it becomes a flat oval. Bind the stuffing into a ball. Fill the stuffing inside the flat oval. Now close the dough ball such that the stuffing is enclosed fully inside. Keep it on a plate. Prepare all the gatte in similar way. Boil the GattaPut enough water in a bowl such that the gatta boils in it easily. Once the water starts to boil, add the gattas one by one. Boil the gatta for 15 minutes.Prepare Gravy for Govind Gatta CurryWash and make a paste of tomato, green chilly and ginger. Add oil to a pan and let it heat. Once the oil is hot add cumin seeds. Once the cumin seeds are roasted, add asafetida, turmeric powder and coriander powder and roast a little. Now add the paste that we had prepared. Roast the masala till the oil separates from it. Now add gram flour. Keep stirring and roast the masala for another 2 minutes. Crumble the remaining mawa and add it to the pan and roast for 2 minutes. Add red chilly powder to the masala. Mix thoroughly. Add curd and stir well till it starts to boil. The water that is present in the gatta, add it to the gravy. Add water to the gravy if it appears thick. Now add garam masala and green coriander leaves. Also add gatta to the gravy. Cover the dish and let it cook on low flame for 5 minutes so that all the spices mix well. Enjoy eating the dish of gobind gatti along with chapati, paratha, naan, puri or rice. Suggestions : Traditionally the gravy of gatta is made using curd, but we have added tomatoes as well. You can prepare the gravy as per your choice. You can even add onions and garlic in the gravy. Cut 1 onion and 4-5 garlics into thin slices and add it to the gravy. Once the cumin seeds are roasted, add onions and garlic to it. Fry the onions till they appear pink. Add the other masalas as it is.
