Kaddu ki khatti meethi sabzi
Pumpkin's sweet and sour sabzi is made in Uttar Pradesh, made with yellow pumpkin and it is a very tasty sabzi.Pumpkin's sweet and sour sabzi can be serves with pooris or paranthas. People like to serve this dish with fresh and hot poori's.
Ingredients for Sweet and Sour Pumpkin Recipe
Yellow pumpkin - 500 grams.
Mustard oil - 2-3 tbsp.
Green coriander - 2-3 tbsp (chopped)
Ginger paste - 1 tsp.
Green chillies - 2 (minced)
Asafoetida - 1 pinch.
Fenugreek seeds - ½ tsp.
Mixed spices - ¼ tsp.
Turmeric powder - ¼ tsp.
Red chilly powder - ½ tsp.
Dried mango powder - ½ tsp.
Coriander powder - 1 tsp.
Sugar - 2 tsp.
Salt - 1 tsp (according to your taste)
How to make Kaddu ki khatti meethi sabzi
Firstly we will peel off the the layer of the pumpkin and then remove it's soft upper part. Wash and clean the pumpkin properly and cut the pumpkin into 1/2-1 inches in square shape.
Heat the oil in a pan, add frenugreek seeds in the hot oil, then asafoetida, after you fry fenugreek seeds, add turmeric powder, ginger paste, green chillies, coriander powder and fry the masala a little. Now add the pumpkin pieces, salt and red chilli powder, stir the pumpkin continuously for 2 minutes, the spices should be coated in the pumpkin properly.
Add 1/4 cup of water, cover with lid for 4-5 minutes in dim flame and let it cook. After 5 minutes check the sabzi, stir it with a spoon. Cover the sabzi again and let it cook for 4-5 minutes more. Check the sabzi again, the pumpkin will turn a little softer, but there is no water in the sabzi. Add 1/4 cup water in it, stir it and cover it, cook it again for 5-6 minutes in dim flame. Check the sabzi, the pumpkin will turn soft by now. Add mixed spices, dried mango powder, sugar and mix it nicely. Stir the sabzi for 1 minute and cook it, after 15 minutes your swwet and sour pumpkin will be ready.
Take out the sabzi in a bowl and serve it while it's still hot and enjoy it.
It serves upto 4 members.
Time taken - 25 minutes
Suggestion : Instead of mustard oil you can use any other cooking oil.

Ye dish Andhra Pradesh mein bhi kafi prasiddh hai, ise Gummadikkai Dappalam kehte hain, udhar tadke mein dhuli urad aur chane ki dal, rai aur karipatta dal kar, til ke tel mein pakate hain aur rasedar bhi banate hain.
