Annakoot curry is prepared on the next day after Diwali for Annakoot-Goverdhan Pooja as prasad. At this time new vegetables are available in the market like cauliflower, peas, carrots etc..to start eating these vegetables Annakoot curry is prepared..
Take a little of all the vegetables available in the market to prepare Annakoot curry, many shop keepers also sell these vegetables in packets. This curry is first offered to the deity then later it is distributed to all in the form of prasad. In North India this prasad is made in all of the temples and mostly homes. So let us prepare Annakoot today.

Ingredients for Annakoot
- Potatoes - 2
- Brinjal - 2-3 (small size)
- Cauliflower - 1
- Sem (broad beans) - 100 grams (3/4 cup Chopped)
- Sangri (radish beans) - 100 grams (3/4 cup)
- Carrot - 1
- Radish - 1
- Round gourd - 2
- Colocasia (arbi) - 1
- Lady finger - 6-7
- Parwal - 2-3
- Bottle gourd (lauki) - 3 inch batons
- Capsicum - 1
- Raw banana - 1
- Pumpkin - small piece
- Add little of any vegetable you like
Spices for Annakoot Recipe
- Ginger - 2 inch long baton
- Green chilly - 2-3
- Green fenugreek - 1 cup (finely chopped)
- Oil - 3-4 tbsp
- Asafoetida - 2-3 pinch
- Cumin seeds - 1 tsp
- Turmeric powder - 1 tsp
- Coriander powder - 2 tsp
- Red chilly powder - 3/4 tcp
- Mango powder - 1/2 tsp (optional)
- Garam masala - 1/2 or 1 tsp
- Salt - 1/2 tsp (as per taste)
- Green coriander - 100 grams (finely chopped)
How to prepare Annakoota Recipe
Clean all the vegetables, peel potatoes, remove stalk of brinjals, floret cauliflower, remove thread from both the sides of the sem. remove stalk from both ends of the sangri ,peel the carrots, cut off both the ends of the lady's finger, peel round gourd and arbi, peel radish and remove its stalk, peel parwal and cut its edges from both ends, remove the stem of the capsicum then cut into 2 halves and remove the seeds as well., peel lauki and banana. Wash all of these vegetables properly.
Strain the washed vegetables, apart from potatoes, brinjals, cauliflower , Cut rest of the vegetables into medium sized pieces, finely chop the radish leaves as well. All vegetables are chopped now.
Wash tomatoes and cut into small pieces, wash, remove stem and chop chilies. Peel, wash and grate ginger. Wash green coriander and chop it finely.
Preheat oil in a wok. Add Asafoetida and cumin seeds in hot oil. After the cumin seeds are roasted put turmeric powder, coriander powder and saute for while. Now add green chilies, ginger and gently fry the spices.
Now add all the chopped vegetables in wok. Also chop potatoes, brinjals and raw banana and add them as well. Add salt and red chilly powder then mix all the vegetables. Put about 1 cup of water, cover the pan and cook vegetables on a high flame till it comes to boil. Once the curry comes to boil cook on a low flame, after 15 minutes check to see if the vegetables have turned soft. If not then cover the lid and let it cook some more. When vegetables turn soft then mix chopped tomatoes. Cook till tomatoes become soft then put garam masala, mango powder and green coriander in the curry. Turn off the flame
Tasty and mouth drooling Annakoot Bhog is ready. Offer Annakoot Prasad to Lord Krishna's deity then later have it yourself with puri or roti.
