There are many ways of preparing lemon pickle – simple lemon pickle, masaledar lemon pickle, sweet lemon pickle, whole lemon pickle, oil lemon pickle and many others.
Lemon pickle must be prepared in the months of December and January. Lemons with thin skins are available in these months. It is tasty, tangy and can be stored for many days. We will make simple lemon pickle, masaledar and sweet lemon pickle.

Ingrediants for Simple Lemon Pickle
- Lemon (Nimbu) – 1 Kg. (30-32 lemons)
- Salt – 200 grams
- Black Salt (Kala Namak)– 50 grams
- Turmeric powder (Haldi)– 1 teaspoon (optional)
How to make Simple Lemon Pickle
Get good quality lemons from the market, with thin skins and no spots.
Wash lemons in clean water. Soak them in drinking water for 24 hours.
Take lemons out of water and wipe dry them thoroughly. Cut lemons in 4 or 8 pieces and remove all seeds with a knife.
Put lemons in a clean and dry glass, ceramic or plastic container and add salt and turmeric. Close the lid of the container and place in sunlight for 20 days. Shake container every 2-3 days, lemon juice and masalas must reach every piece. Lemon skins will be soft and pickle will be ready. This pickle stays fresh for many days. Always use dry and clean spoon for the pickle.

Ingrediants for Masaledaar Lemon Pickle
- Lemon (Nimbu) – 1 Kg. (30-32 lemons)
- Salt – 200 grams
- Black Salt (Kala Namak)– 50 grams
- Cumin Seeds (Jeera) – 2 teaspoon
- Carom Seeds (Ajwain) – 1 teaspoon
- Fenugreek Seeds (Methi)– 1 teaspoon
- Black Pepper – 2 teaspoons
- Cloves (Laung) – 1 teaspoon
- Black Cardamom (skins removed) – 1 teaspoon
Prepare lemon pickle like simple lemon pickle. When lemon skins are soft- roast cumin seeds, carom seeds and fenugreek till they turn brown, add black pepper, cloves, black cardamom and 2 teaspoon black salt, grind all masalas and mix in lemon pickle. Squeeze juice of 6-7 lemons in this pickle to keep lemons moist.
Lemons absorb all masalas within 2 days. Lemon pickle is ready. Always use clean and dry spoon for taking pickle. This pickle stays fresh for 1-2 years.

- Salt – 200 grams
- Black Salt (Kala Namak)– 50 grams
- Sugar – 500 grams
- Black Pepper – 1 tablespoon
- Black Cardamom (skins removed) – 1 teaspoon
How to make Sweet Lemon Pickle
To make sweet lime pickle, cut lemons, add salt and leave so that they become softer just like simple lemon pickle but do not add turmeric in this pickle. When skins are soft, add black pepper, black cardamom and sugar.
Sugar will sweeten lemons in a week and cardamom, black pepper will release their special flavors.
Sweet lemon pickle is ready. This pickle is more popular among kids. Always use clean and dry spoon for taking pickle. This pickle stays fresh for 1-2 years.
