Ghee - 3/4 cup (135 grams)
Semolina - 1/4 cup (50 grams)
Powdered Sugar - 1 cup (170 g)
Cardamom - 6, coarsely crushed
Almond Flakes
Process of making Besan Barfi
Sieve 2 cups of gram flour in a bowl. Then put 3/4 cup of ghee (save 2-3 tbsp) in the pan and heat it. Put gram flour and 1/4 cup of semolina in lightly heated ghee. Fry them on low-medium flame while stirring continuously.
Roast the gram flour till it changes colour, becomes slightly oily and gives a nice aroma. Also, keep removing the gram flour from the ladle, otherwise that gram flour will remain raw. After roasting the gram flour well, if it seems too dry in the middle, then add 1 tbsp of ghee. Roast it while stirring continuously.
After the gram flour is roasted, reduce the flame to low and add 1 cup of sugar powder and 6 coarsely crushed cardamom to it. Mix them well and roast them while stirring continuously on low-medium flame. Turn off the flame when the mixture becomes slightly moist. Now grease a plate with ghee and put the mixture in it and make it even.
Then put almond flakes on it and press it lightly. Now let it cool down, then keep it in the fridge for 1 hour. After the time is up, cut the pieces according to you. Take out the pieces by rotating the plate on the gas for 10-12 seconds. In this way besan ki barfi will be ready, serve and enjoy its taste.
