Fresh Aloo Bukhara Chutney Recipe

Today we are going to make spicy sweet chutney of Aloo Bukhara to eat with chaat samosas. It is prepared in a very easy and quick way. By making it once, you can store it for a long time. It is very different in taste from ordinary mango chutney. So you too make Aloo Bukhara chutney with this easy method and enjoy its taste with your family.
Ingredients for Sweet Plum Chutney
Plum - 5 (300 g)
Muskmelon Seeds - 1 tbsp
Sugar - 1 cup (200 grams)
Cumin Powder - 1 tsp
Salt - 1/2 tsp
Black Salt - 1 tsp
Red Chilli Powder - 1 tsp
Garam Masala - 1/4 tsp
Raisins - 1 tbsp
Cardamom - 4 small, 2 large
Process of making Sweet Plum Chutney
Wash and dry 5 Aloo Bukhara thoroughly. Now put them in a mixer jar and cut them and remove the seeds. Grind them finely. Now put 1 tbsp of melon seeds in the pan and dry roast it while stirring continuously till it puffs up lightly. Then take them out on a plate.
Now put the paste of Aloo Bukhara in the same pan. Put 1/2 cup of water in the jar and put it in the pan. Cook them while stirring them for a while. When it comes to a boil, add 1 cup of sugar and mix it. Cook it while stirring it for a while till the sugar dissolves.
When the sugar dissolves, add 1 tsp of cumin powder, 1/2 tsp of salt, 1 tsp of black salt, 1 tsp of red chilli powder and 1/4 tsp of garam masala. Mix them well and add 1 tbsp of raisins to it and cook till it thickens while stirring occasionally.
Meanwhile, peel 4 small and 2 big cardamoms, take out their grains and crush them coarsely. When the chutney becomes thick, turn off the flame and add roasted melon seeds and crushed cardamom and mix it well. In this way the chutney of Aloo Bukhara will be ready.
Add 1 tbsp of vinegar to it and mix it well. After the chutney cools down completely, store it in the refrigerator. Serve the chutney with chaat, samosa, paratha or any other and enjoy the taste.
Suggestions
If the chutney gets frozen by keeping it in the fridge, when you take it out to use, add some water and mix it and use it.
