Mixed Veg Stuffed Jumbo Paratha Recipe

The taste of eating parathas with stuffing for breakfast is something else. Keeping this in mind, today we are going to make paratha filled with lots of stuffing. Even after being filled with so much stuffing, this paratha will not burst. It is very easy to make and this one paratha will be a full meal in itself. So you too make this Jumbo Paratha with this easy method and enjoy its taste.
Ingredients for Mixed Stuffed Paratha
Wheat Flour - 2 cups (300 grams)
Salt - a little more than 1/2 tsp
Oil - 2 tsp
For Stuffing
Oil - 2 tsp
Cumin Seeds - 1/2 tsp
Green Chilli - 2, finely chopped
Fenugreek Leaves - 1 cup (125 grams)
Salt - a little more than 1/2 tsp
Boiled Potato - 4, Grated
Paneer - 100 grams, grated
Coriander Leaves
Red Chilli - 1/4 tsp
Turmeric Powder - 1/4 tsp
Process of making the Dough
Put 2 cups of wheat flour, a little more than ½ tsp of salt and 2 tsp of oil in a bowl. Mix them well and knead a soft dough by adding little by little water. After kneading, cover it and keep it for 20 minutes.
Process of making the Stuffing
Put 2 tsp of oil in a pan and heat it. Put ½ tsp of cumin in hot oil and fry it lightly. Reduce the flame to low and add 2 finely chopped green chillies(seeds removed), 1 tsp of grated ginger, 1 cup of finely chopped fenugreek and a little more than ½ tsp of salt.
Roast them for 1-1.5 minutes and add 4 boiled grated potatoes, 100 grams of grated paneer, green coriander, ¼ tsp of red chilli and ¼ tsp of turmeric. Stir fry them for 3-4 minutes. After roasting, turn off the flame and take it out on a plate and let it cool down.
Process of making Jumbo Paratha
Take some oil on your hand and mash the dough well and make it smooth. Then break the dough and make it round like a peda. Now with the help of your thumb and finger give the shape of a bowl to the paratha. Fill in as much stuffing as possible. Then while raising the dough, close the dough and give it the shape of a peda.
Now wrap it in dry flour and keep it on the wheel and press it with your fingers. After increasing, wrap it in dry flour and roll it slightly thick. Then heat the tawa and spread oil on it. Place the paratha on a hot griddle and roast it on low-medium flame.
When the colour becomes light from above, turn it over and roast it from the other side as well. Now spread it by pouring some oil on it, in the same way, turn it upside down and spread it by pouring oil on the other side as well. Cook it over and over till brown spots appear from both the sides. Then take it off and make the rest in the same way.
In this way, jumbo parathas with lots of stuffing will be ready. Serve them with green chutney, curd or raita and enjoy the taste.
