Vrat ka Khana Samvat Rice Balls n Tikki Recipe

On this auspicious occasion of Navratri, today we are going to make Sama's Rice Balls and Tikkis. We will prepare this dish while fulfilling the desire to eat spicy food during fasting. It is very easy to make them and they are ready in a jiffy. They are very tasty, so much so that you would like to make them apart from fasting. So you also make Sama's rice balls and tikkis on any one day of this Navratri and enjoy their taste.
Ingredients for Stuffed Balls n Tikki for Vrat
Barnyard Millet - 3/4 cup (150 grams)
Ghee - 1 tsp
Boiled Potato - 3 (175 g)
Rock Salt - 1/2 tsp
Green Chilli - 1, finely chopped
Black Pepper - 1/4 tsp, crushed
Ginger - 1/2 tsp, grated
Cumin Powder - 1/2 tsp
Lemon - 1/2
Coriander Leaves - 1 tbsp
Ghee - 1 tbsp
Cumin Seeds - 1/4 tsp
Green Chilli - 5
Black Pepper - 1/4 tsp
Rock Salt - a little less than 1/4 tsp

Process of making the Dough
Wash ¾ cup of sama rice thoroughly and soak it in water for 2 hours. After the time is up, remove their water and put them in a mixer jar. Also, put 2 tbsp of water in the mixer jar and grind it finely.
Now add rice paste, 1.5 cups of water and ½ tsp of rock salt to the pan and mix. Now turn on the flame and cook it on high flame while stirring continuously. As soon as it starts becoming thick, cook it by stirring it continuously on medium flame.
As soon as it starts coming in dough form, add 1 tsp of ghee and mix it and reduce the flame to low. Now cook it for 2 minutes while stirring continuously. Then turn off the flame and take out the dough in a bowl.
Process of making the Stuffing
Break 3 boiled potatoes into a bowl and make them finely. Then add ½ tsp of rock salt, 1 finely chopped green chilli, ¼ tsp of crushed black pepper, ½ tsp of grated ginger, ½ tsp of roasted cumin powder, ½ lemon juice and 1 tbsp of green coriander.
Mix everything well, in this way the stuffing will be ready. Now make small balls of stuffing and keep them on a plate.
Process of assembling Rice Balls and Tikki
Apply some ghee on your hand and mash the dough lightly. Then make slightly big balls from the balls of stuffing. Now take a ball and make it round like a peda. Give it the shape of a bowl and put a ball of stuffing in the middle and close it and give it a round shape.
Now lift a ball in the same way and make it like a peda by making it round. Then give it the shape of a bowl and place a stuffing ball in it. Now close it and make it round and give it the shape of tikki by pressing again. Similarly make some balls and some in the shape of tikkis.
Process of steaming Rice Balls and Tikki
Heat 3 cups of water in a pan. Grease the sieve with ghee, then keep rice balls and tikkis at a distance in it. Now put the sieve on the pan, cover it and steam it on medium-high flame for 9-10 minutes. After the time is up, turn off the flame and let them cool down.
Process of making tadka
Put 1 tbsp of ghee in the pan and heat it by spreading it. Put the tikkis in a pan in hot ghee and fry them on low-medium flame. Take them out by making them slightly crispy from both the sides. Then reduce the flame to low and put ¼ tsp of cumin seeds in the remaining ghee of the same pan and fry it lightly.
Then add 2 chopped green chilies and 3 whole green chilies and stir it lightly. Now add ¼ tsp of crushed black pepper and ¼ tsp of rock salt and stir it lightly. Add rice balls to it and fry them for 1 minute while stirring continuously, coating them with spices.
After the time is over, turn off the flame and add some green coriander and mix them. In this way rice balls and tikkis will be ready. Serve them with green chutney and enjoy their taste.
Suggestions
Rice balls have to be steamed only for 9-10 minutes, steaming for too long can cause them to burst.
