Navratri Special Vrat thali

On this auspicious occasion of Navratri, today we are going to make a fasting plate. We will make all the dishes on this plate with little ghee without frying. All the dishes will be very tasty to eat and this plate is also very easy to make. Out of all the dishes made on this plate, you can make any one, two or whichever you like. So following this method, you should also make this plate on any one day of this Navratri and enjoy its taste.
Ingredients for Vrat Ki Thali using less ghee
For Sabudana Kheer
Milk - 1/2 litre, full cream
Sago - 1/4 cup (50 grams)
Almond - 1 tsp, finely chopped
Cashew - 1 tsp, finely chopped
Raisins - 1 tsp
Sugar - 1/4 cup (50 grams)
Cardamom - 3, coarsely crushed
For Vrat Ke Aloo
Boiled Potato - 4 (250 g)
Ghee - 1 tbsp
Cumin Seeds - 1/2 tsp
Green Chilli - 2, finely chopped
Ginger - 1 tsp, grated
Tomato - 1, chopped
Rock Salt - a little more than 1/2 tsp
Black Pepper - 1/2 tsp, crushed
Green Coriander - Coriander Leaves
For Moongfali Sundal
Peanut - 1/2 cup (100 grams)
Ghee - 1 tsp
Cumin Seeds - 1/4 tsp
Green Chilli -1, finely chopped
Rock Salt - 1/2 tsp
Fresh Coconut - 2 tbsp, grated
For Vrat Ki Chutney
Coriander Leaves - 1 cup, chopped
Green Chilli - 3, small
Ginger - 1/2 inch
Rock Salt - 3/4 tsp
Fresh Coconut - 1/2 cup, grated
Lemon - 1, medium
For Raita
Curd - 1 cup
Rock Salt - 1/2 tsp
Cumin Powder - 1/2 tsp
Green Coriander - Coriander Leaves
Cucumber - 1, grated
For Fruit Salad
Banana
Apple
Grapes
Lemon - 1 tsp
Rock Salt - 1/2 tsp
For Singhare Ke Aate Ka Paratha
Potato - 4 (200 g)
Ginger - 1 tsp, grated
Green Chilli - 1 tsp, finely chopped
Water chestnut Flour - 250 grams
Rock Salt - 3/4 tsp
Black Pepper - 1/4 tsp, coarsely ground
Cumin Seeds - 1/2 tsp
Coriander Leaves - 1 tbsp, chopped
Process of making Kheer
Boil ½ litre of full cream milk in a pan on high flame. When it comes to boil, stir the milk by turning the flame to medium. After stirring, put ¼ cup of sago (washed and soaked in water for 2 hours) after removing the water. Cook it on low-medium flame for 10 minutes while stirring it at a time.
When the time is up, add 1 tsp of finely chopped almonds, 1 tsp of finely chopped cashews and 1 tsp of raisins. After mixing them, add 3 coarsely crushed cardamom to it and mix it well. Now turn off the flame and take it off, in this way the kheer will be ready.
Process of making Vrat ke Aloo recipe
Cut 4 boiled potatoes and cut them into big pieces. Now put 1 tbsp of ghee in the pan and heat it. Put ½ tsp of cumin seeds in hot ghee and reduce the flame. After the cumin is lightly roasted, add 2 finely chopped green chilies and 1 tsp of grated ginger and fry it lightly.
When lightly roasted, put 1 chopped tomato and turn the flame to medium. Now add a little more than ½ tsp of rock salt and ½ tsp of crushed black pepper. Mix them and fry them lightly.
Now add chopped potatoes and stir fry the potatoes on high-medium flame. Cook them over and over for 6-7 minutes, then add some green coriander to it and mix it well. Turn off the flame, in this way the fasting potatoes will be ready.
Process of making Moongfali Sundal
Wash ½ cup of peanuts thoroughly and soak them in water for two hours. When the time is up, remove the water and put peanuts and ½-¾ cup of water, close the cooker. Cook it on high flame till it whistles, then after a whistle, reduce the flame to low and cook it for 5 minutes. After 5 minutes turn off the flame and let the cooker cool down.
When the cooker cools down, filter the peanuts. Now put 1 tsp of ghee in a pan and heat it. Put ¼ tsp of cumin seeds and 1 finely chopped green chilli in hot ghee and fry them lightly.
When roasted, add boiled peanuts, ½ tsp of rock salt and 2 tbsp of grated fresh green coconut. Mix all well and cook for a minute. Turn off the flame after a minute, in this way the groundnut sandal will be ready.
Process of making Vrat ki Chutney
Put 1 cup of green coriander, 3 small green chilies, ½ inch ginger, ¾ tsp of rock salt, ½ cup of grated fresh green coconut, juice of 1 small lemon and 1-2 tbsp of water in a mixer jar. Make a fine paste by grinding them, in this way fasting chutney will be ready.
Process of making Kheera Raita
Put 1 cup of curd in a bowl and make it smooth. Then add ½ tsp of rock salt, ½ tsp of roasted cumin seeds and some finely chopped green coriander to it. Grate a cucumber and put it in it and mix it all well. In this way cucumber raita will be ready.
Process of making Dough for the Parathas
Peel 4 raw potatoes, wash them well and cut them into small pieces. Put chopped potatoes, 1 tsp of grated ginger and 1 tsp of finely chopped green chillies in a mixer jar. Grind them finely, remember not to add water.
After grinding, in a bowl add 1 cup of water chestnut flour, potato paste, ¾ tsp of salt, ¼ tsp of coarsely ground black pepper, ½ tsp of cumin and 1 tbsp of finely chopped coriander leaves. Mix them well, on mixing it will be very thick, so by adding water little by little, knead the dough like a paratha dough.
After kneading the dough, add some ghee to it and mash the dough well and make it smooth. After kneading, cover it and keep it for 15 minutes.
Process of making Fruit Salad
In a bowl, cut 1 banana, cut half an apple and put some grapes. Then add 1 tsp of lemon juice and a little less than ½ tsp of rock salt to it. Mix them well and the fruit salad will be ready.
Process of making Parathas
Take a little ghee in your hand and mash the dough lightly. Make a peda by breaking a little dough, then wrap it in dry flour and raise it with your hands. Then wrap it back in dry flour and roll it out lightly. After rolling, you can cut it with a big lid and give it a round shape.
Now heat the pan and spread some ghee on it. Then put the parantha on the pan and cook it on low-medium flame till it becomes slightly dark from above. After the colour changes, flip it over and cook it till brown spots appear on both the sides. Then take it off and roast the rest of the parathas in the same way.
Now serve the plate and enjoy this low ghee fasting meal with your family.
