Ingredients for Besan Churma Laddu
Gram Flour - 2 cups (250 grams)
Semolina - ½ cup (90 grams)
Ghee - ¾ cup (180 grams)
Milk - ½ cup+2 tbsp
Cashew - 2 tbsp, finely chopped
Almond Flakes - 2 tbsp
Desiccated Coconut - ¼ cup
Jaggery - ¾ cup (150 grams)
Cardamom - 1 tsp
Boora or Sugar Powder - 1 cup (150 g)
Process of making the Dough
In a bowl, add 2 cups of gram flour, ½ cup of semolina and 4 tbsp of ghee and mix it well. After mixing, add milk little by little and knead a light hard dough. After kneading, cover it and keep it for half an hour.
Process of making the Parathas
Mash the dough lightly and break it into 4 parts. Then take a ball and make it round like a peda. Roll it a little thick, there is no problem if the edges are torn. Now heat the tawa lightly, add some ghee to it, put the parantha on the tawa and cook it while turning it till brown spots appear on both the sides.
After roasting take it off and roast the rest in the same way. After roasting all the parathas, keep them in a tray and break them. Then keep it to cool down a bit.
Process of making Mixture for Ladoo
Put the broken parantha pieces little by little in the mixer jar and grind them. Make their powder and put them in a rice sieve and sieve them. Then put 4 tbsp of ghee in the pan, add churma and fry them for 2 minutes while stirring continuously.
The mixture will be ready, separate them in two equal parts. Take one part out in a bowl and leave one part in the pan.
Process of roasting Dry Fruits
Put ½ tsp of ghee in the pan and heat it lightly. Add 2 tbsp of finely chopped cashew nuts and 2 tbsp of almond flakes and fry it on low-medium flame for 1-1.5 minutes while stirring continuously. After roasting, put ¼ cup desiccated coconut in it and fry them for ½-1 minute and take them out on a plate.
Process of making Jaggery Churma Ladoo
Put ¾ cup of jaggery and 1 tbsp of water in the pan and cook it while stirring it for a while till the jaggery melts completely. When the jaggery melts, turn off the flame and let it cool down a bit. When it cools down slightly, make a space in the middle of the churma kept in the bowl.
Now filter the jaggery syrup and put it in it. Also, add ½ tsp of coarsely ground cardamom to it and mix them well. When the mixture cools down slightly, tie as big or small ladoos as you want. In this way, besan churma ladoos with jaggery will be ready.
Process of making Sugar Churma Ladoo
Put the remaining churma, 1 cup of boora, roasted dry fruits and ½ tsp of coarsely ground cardamom in the bowl. Mix them well, add 2 tbsp of ghee and 1 tbsp of milk and mix it well. Now tie as big or small ladoos as you want. In this way the sugar besan churma ladoos will be ready.
Serve them to the guests and family on the day of Holi and enjoy their taste.
