In the winter season, there is a great desire to eat sweets. That's why today we are going to make granulated laddus made from sesame, jaggery and gram flour. It is very easy to make them and they are ready in a jiffy. So in this winter season, make these laddus and enjoy their sweet taste with your family.
Ingredients for Til-Gud-Besan Ladoo
Sesame Seeds - 1 cup (140 grams)
Jaggery - 1 cup (250 grams)
Desi Ghee - ½ cup (100 grams)
Gram Flour - 1 cup (125 grams)
Cardamom - 6-7 coarsely crushed
Process of roasting Sesame Seeds and Gram Flour
Heat a pan, add 1 cup of white sesame seeds and fry it on medium-high flame, stirring continuously, till it changes color. After roasting, take them out, then clean the pan and melt it by adding 6-7 tablespoons of ghee. When it melts, add 1 cup of gram flour and fry it on low-medium flame while stirring continuously. If it looks dry then you can add 1 teaspoon more ghee.
After roasting, turn off the flame and keep stirring it for a while because the pan will be hot from below. Then take off the pan and let the gram flour cool down.
Process of making Jaggery Syrup
Finely break 1 cup of jaggery in a pan and add 2 tablespoons of water. Now cook on medium-high flame, stirring continuously, till the jaggery melts. After foaming, take the flame completely and take some water in a bowl and put the jaggery syrup in the water. Take it out and see, it will be stretching and will be soft which means it is not cooked. Now cook it for 1 minute while stirring continuously on low flame. After the time is up, put it back in the water a little and try it. If the jaggery starts breaking, then turn off the gas, the jaggery syrup will be ready.
Process of making Mixture for Ladoo
Put jaggery syrup and roasted sesame seeds (a few sesame seeds have to be saved, about 2 tablespoons) in a pan of roasted gram flour. Mix them well and let them cool. When the mixture hardens slightly, put it in a mixer jar and grind it finely. Take out the ground mixture in a bowl and add the remaining whole sesame seeds and 6-7 cardamoms coarsely crushed. Mix everything well, the mixture for laddoos will be ready.
Process of making Ladoo
After making the mixture, make as big or small laddus as you want. In this way, coarse ladoos of sesame, jaggery, gram flour will be ready. Keep them in a container and enjoy their taste with your family.
Suggestions
Do not fry sesame seeds too much, take them out as soon as they swell slightly and their color changes.
Besan has to be roasted on low-medium flame, so it does not darken too much.
While making jaggery syrup, after melting the jaggery and it starts foaming, start checking it. The syrup will be ready as soon as it starts breaking down.
These laddoos can be kept for 6 months and eaten.
