Creamy Madhuban Vada Chaat Recipe

Today we are going to make Madhuban Vada with a spicy taste. It is very easy to make them and they are ready in a jiffy. It is a street food but nowadays people are liking it a lot even at weddings and parties. So with this easy recipe, you can also make this delicious Madhuban Vada and enjoy its taste with your family.
Ingredients for Madhuban Vada
Green Gram (Split) - ½ cup (100 grams)
Black Gram (Split) - 2 tbsp (25 g)
Salt - 1.5 tsp
Ghee - ½ tsp
Almonds - ¼ cup, chopped
Cashew - ¼ cup, chopped
Cumin Seeds - ½ tsp
Curd - 3 cups (700 grams)
Powdered Sugar - ¼ cup
Milk - ½ cup
Raisins - 2 tbsp
Sev - ½ cup
Pomegranate - ½ cup
For Masala Mix
Cumin Seeds - 2 tsp
Coriander Seeds - 1 tsp
Carom Seeds - ½ tsp
Black Pepper - 20
Cloves - 5
Asafoetida - 2 pinch
Red Chilli - 1 tsp
Kashmiri Red Chilli - 1 tsp
Black Salt - 2 tsp
Process of making the Batter
First of all, put a sieve in a bowl and put 3 cups of curd in it and keep it covered, it will keep filtering. Now remove the water and add ½ cup of washed moong dal (washed and soaked in water for 3 hours), 2 tbsp of washed urad dal (washed and soaked in water for 3 hours), ½ tsp of salt and 2 tbsp of water in the mixer jar. Grind them finely.
After grinding, take it out in a bowl and beat it with a spoon for 6-7 minutes. The dal batter will become very light on whipping, in this way the batter will be ready.
Process of making Vada
Heat oil in a pan, the oil should be medium-high hot and the flame should also be medium-high. Grease your hand and lift some batter and put it in the hot oil making rounds. Fry them over and over till they become light golden brown. After frying, take them out and fry the rest in the same way.
Process of soaking Vada
Pour ¾ litre of hot water in a big bowl, remember the water should be hot enough that you can touch it. Now add 1 tsp of salt and mix it. Then put as many vadas in water as you want to serve. Keep a small plate on top and place a big plate on it. Now keep them soaked in water for half an hour.
Process of roasting dry fruits
Put ½ tsp of ghee in a pan and heat it. Put ¼ cup of chopped almonds and ¼ cup of chopped cashews in hot ghee and fry while stirring continuously. Remember, they have to be roasted till they change colour and aroma comes. After roasting, take them out on a plate and let them cool down.
Process of preparing the Masala
Heat the pan and add 2 tsp of cumin, 1 tsp of whole coriander, ½ tsp of carom seeds, 20 black peppers and 5 cloves in it. Roast them on low-medium flame while stirring continuously, till they change colour slightly and get aroma. After roasting, turn off the flame and keep stirring them for some time, then add 2 pinch of asafetida to it and mix it well.
Take them out and cool them. When it cools down, put them in the crusher and crush them lightly. When crushed, add 1 tsp of crushed red chilli, 1 tsp of kashmiri red chilli and 2 tsp of black salt. Mix them well, the masala will be ready.
Process of serving Madhuban Vada
Take out the curd in a bowl, add ¼ cup of sugar powder and mix it well. In this way the curd will be ready. Squeeze the vada lightly from the water, drain out all the water and take it out in another bowl. Now take out one vada in a bowl and keep it. Break it lightly, then pour curd on it and cover it completely.
Now sprinkle some spices, some salt on it. Then put some curd and put some finely chopped sev, some spices, some salt, roasted dry fruits and some pomegranate seeds on it. In this way Madhuban Vada will be ready to serve. Similarly prepare and serve the rest and enjoy their taste with your family.
Suggestions
The batter has to be grinded finely.
While frying the vada, the oil should be medium-high and the flame should also be medium-high.
