In this season of carrots, today we are going to make sweet Gajar Ka Halwa. In today's recipe, we will prepare instant Gajar Ka Halwa. We will neither add milk, nor mawa, nor condensed milk, nor milk powder in this. Without these ingredients, we will prepare very tasty Gajar Ka Halwa. So with this easy method, you can also make sweet and delicious Gajar Ka Halwa and enjoy its taste with your family.
Ingredients for Gajar ka Halwa
Carrots - 600 grams
Malai - 1 cup
Sugar - ½ cup
Cashew - 2-3 teaspoon
Almonds - 2-3 teaspoon
Cardamom - 4, coarsely grounded
Process of grating Carrots
Peel 600 grams carrots and wash them well and dry them. Then if the carrots are long, cut them into two or three parts. Now grate the carrots with a coarse grater, grate all the carrots in a bowl. Remember, the yellow part in the middle has to be removed because it is not sweet and the taste of the halwa can get spoiled.
Process of making Gajar ka Halwa
Put grated carrot and 1 cup fresh malai of homemade milk in the cooker. Now burn the flame and mix the malai and carrot well. Then close the cooker and cook on high flame till one whistle comes. After a whistle, cook it for 2 more minutes on low flame.
After the time is up, let the cooker cool down, then open it. A little milk must be separated from the malai, turn the flame on and cook on medium-high flame while stirring continuously till the milk gets mixed with carrots. When the milk is almost finished, then add 1 cup of sugar and cook till the sugar dissolves in halwa.
When the sugar dissolves well and halwa becomes thick, add 2-3 tsp cashews, 2-3 tsp almonds and 4 coarsely crushed small cardamoms. Mix them well, turn off the flame and take out the halwa. In this way, gajar ka halwa will be ready, serve it garnished with some cashew nuts and almonds and enjoy its taste.
Suggestions
When you open the cooker and cook halwa, keep stirring it once in a while.
You can keep it in the fridge and eat it for 7 days.
You can add any, more or less dry fruits of your choice. If you don't like it, you can also skip it.
