Crispy Coconut Cutlets with Green Chilli Chutney and Fruit Dahi

There is a lot of desire to eat delicious food during fasting. But many times we are left in the same thought that what should be made after all? Come, today we will make crunchy coconut cutlets as well as make green coriander chutney and fruit curd. This is an absolutely delicious fast food which will be ready in minutes, and while breaking the fast, your heart will also be completely happy with a delicious meal.
Ingredients for Coconut Cutlets
For Tikki dough
Sama Rice - ½ cup (100 grams)
Ginger - 1 tsp (grated)
Green Chilli - 1 tsp (chopped)
Black Pepper - ½ tsp (grated)
Cumin Seeds - ½ tsp
Rock Salt - 1 tsp
Ghee - 1 tsp
For Stuffing
Potato - 2 boiled
Fresh Coconut - ½ cup, grated
Almond Flakes - 1 tbsp
Raisin - 15-20
Green Chilli - ½ tsp (chopped)
Black Pepper - ¼ tsp (grated)
Rock Salt - ½ tsp
For Coating
Chestnut Flour - 2 tbsp
Rock Salt - ¼ tsp
Black Pepper - ¼ tsp (grated)
Raw Peanuts - ½ cup
For Vrat Chutney
Coriander - 1 cup
Ginger - ½ inch
Green Chilli - 2 whole
Rock Salt - 1 tsp
Lemon Juice - 1 tsp
For Fruit Curd
Curd - 1 cup
Banana - 1
Apple - 1
Pomegranate Seeds - 2 tbsp
Sugar Powder - 2 tbsp
Process of making dough for Tikki
Wash ½ cup of sama rice thoroughly and soak it in water for 2 hours. When the time is up, put the rice in the mixer jar and make a fine paste. Now take rice paste, 1 cup of water, 1 tsp of grated ginger, 1 tsp of finely chopped green chilli, ½ tsp of ground black pepper, ½ tsp of cumin and 1 tsp of rock salt (as only rock salt is used for fasting).
Keep stirring this mixture, as the mixture heats up, it will thicken and become a dough. When the dough is ready, add 1 tsp of ghee and stir the mixture a little. After it is done, take it out in a bowl and keep it covered. Now grate 2 boiled potatoes and mix them in this dough. If the dough cools down a bit, then add 1 spoon of ghee and mix it and then keep it covered.
Process of making Stuffing
Put ½ cup of grated fresh coconut and 1 tbsp of almond flakes in a bowl. If you do not like almonds, you can also add cashews or chironji. Then add 15-20 raisins (you can skip them if you don't like), ½ tsp of finely chopped chilies, ¼ tsp of ground black pepper and a little less than ½ tsp of rock salt and mix the whole mixture. The stuffing for the cutlets will be ready.
Process of making Chestnut Flour solution
In a small bowl, take 2 tbsp of water chestnut flour, add water little by little and mix this solution. In place of water chestnut flour, you can take any fasting flour or you can also save the paste of rice of Sama. Make a thin mixture and add ¼ tsp of powdered black pepper and ¼ tsp of rock salt and mix it, a solution will be ready.
Now put ¾ cup of peanuts in the mixer jar and make a coarse powder. Remember, do not run the mixer at the same time, run it once and then turn it off, then run it once and turn it off. Similarly make this powder.
Process of making Tikki
Take a little ghee in your hand and take as much dough as you want to make tikkis. Then make the dough round and flatten it a bit and make the shape of a bowl. Fill 1 spoon of stuffing in it, close it well and press it to give the shape of tikki. Remember not to make the tikkis too thick. After this, dip the tikkis in the batter of water chestnut, then coat the tikkis in peanut powder. Similarly coat the rest of the tikkis as well.
Process of making Tikki
Take a non-stick pan, put 2-3 spoons of ghee in it and heat it lightly on medium flame. When the ghee becomes hot, put tikkis in it and cook it on low-medium flame for 3-4 minutes. When it turns light golden brown, turn it over and cook it on the other side as well. When the tikkis are roasted well, take it out, then prepare the rest of the tikkis in the same way. Take out the peanuts that are left in the ghee before adding the rest of the tikkis.
Process of making Coriander Chutney
Chop 1 cup of green coriander roughly and put it in a mixer jar. Then add ½ inch of ginger, 2 green chillies, less than 1 tsp of rock salt, juice of half a lemon and 2-3 tbsp of water and grind this mixture in a mixer. In this way the chutney of Green Coriander Vrat will be ready.
Process of making Fruit Curd
Add 1 sliced banana, 1 sliced apple, 2 tbsp of pomegranate seeds and 2 tsp of sugar powder in a cup of fresh curd and mix this mixture, like this Fruit curd will be ready. You can take any fruit as per your wish and you can increase or decrease the amount of sugar as per your wish.
Enjoy a full meal of green coriander chutney and fruit curd with crunchy coconut cutlets.
Suggestions
If you do not eat any of the added spices, then you can also remove them.
Fruit curd can be mixed with any fruit of choice.
