Process of making Nutri Matar Masala Curry
Put 2 cups of water and ½ tsp of salt in the pan, cover it and let it come to a boil. When it comes to boil, add 1 cup of soya chunks and let it boil for 2-3 minutes on medium flame. When the time is up, turn off the flame and cover it and keep it to cool down.
Heat 2 tbsp of oil in a pan. Reduce the flame to low and put 2 bay leaves, 1 cinnamon, 3 cloves, 7-8 black peppers, 1 big cardamom (peeled and take the seeds) and ½ tsp of cumin in the hot oil. Fry the spices lightly, then add tomato-green chilli-ginger (1 tomato, 1 green chilli and ¾ inch of ginger) paste, ½ tsp of turmeric, 1.5 tsp of coriander powder and 1 tsp of kashmiri red chilli.
Mix them well and add grated beetroot to it. Then fry it, after half-roasted, add 1 tsp dry fenugreek (crushed and put it in) and mix it. Then add ½ cup of green peas to it, cover it and cook it for 3-4 minutes on low flame.
Squeeze the boiled soya chunks in the mixer jar until it is ripe. Check the mixer by running it a little and then back it. Grind them coarsely and take them out. When the oil is released from the spices and the peas are mashed, it will be ready after roasting.
Now add grounded soya chunks and mix it well and fry lightly. Then add 1 cup of water and ¾ tsp of salt and mix it well. Now cover it and cook it on low flame for 5-6 minutes. After the time is up, if it looks too thick, add 2-3 spoons more water to it. Add some green coriander and cook it for 5 minutes on low flame.
When the time is up, Nutri Matar Masala Curry will be ready, take it out. Garnish it with green coriander and serve it with roti, naan or rice, and enjoy its taste.
Suggestions
Check the soya chunks by running them once in the mixer, then take them out once again by stirring lightly.
