Special Shahi Shikanji with dahi, rabdi and dry fruits

There are many royal things famous in Indore, one such royal drink is Indore's Shahi Shikanji. It is very tasty and along with drinking it is also royal to look at. It is very easy to make, curd, rabdi and dry fruits will taste good in it. So you too make this royal drink of Indore and enjoy it in a royal style.
Ingredients for Shahi Shikanji
Curd - 1 cup
Almond - 10-12, soaked
Cashews - 10-12, soaked
Raisins - 1 tbsp, soaked
Fresh Cream Milk - 1 litre
Kesar Strands - 15-20
Sugar - 4 tbsp
Cardamom - 4, coarsely grounded
Process of making Shahi Shikanji
Place a sieve on the bowl, place a cloth over it. Now keep 1 cup of fresh curd on it and leave it like this. All the water of curd will come out from it, remember to take fresh curd. Meanwhile, keep 10-12 almonds and cashews soaked in hot water. Soak 1 tbsp of raisins in water as well.
Wash the pan by soaking it in some water, then add 1 liter of full cream milk to it. Cook it on high flame till it comes to a boil, then while stirring, cook the milk on medium-high flame till it thickens well. Soak 15-20 saffron threads in a bowl by taking out some milk from the pan. When the milk becomes thick, add saffron milk to it and mix. After cooking a little, when the milk is reduced to half, turn off the flame and let it cool down.
After about 15 minutes the milk will have cooled down. Now take out the curd also in a separate bowl, its water will have gone out. Take out cashews, almonds and raisins from the water and keep them aside. Remember, almonds have to be peeled.
In a juicer mixer jar, add cashews, almonds, curd and 4 tbsp of sugar and grind them to a fine paste. If it is not ground well, then add some milk to it and grind it. After grinding, add the remaining milk and 4 coarsely ground cardamom and grind them back. After grinding, add whole soaked raisins to it, in this way the royal shikanji of Indore will be ready. Keep it in the fridge and serve it cold and enjoy this royal taste.
Suggestions
While cooking the milk, keep stirring it for a while.
