Today we are going to make maize flour til tikki with a new recipe. These are very crispy and crunchy cookies loaded with iron and calcium. The method of making them is very easy. They are so delicious to eat that you will finish eating them in a few days. You can also eat them with tea. So you also make these delicious sweet tikkis and enjoy their taste.
Ingredients for Makka Ki Tikki
Jaggery - ½ Cup (90 grams)
CornMeal - 2 Cup (250 grams)
Sesame Seeds - ½ Cup (60 grams)
Ghee - 4 tsp
Oil for frying
Process of making Jaggery Syrup
Put ½ cup of jaggery and 1 cup of water in the pan and cook till the jaggery dissolves. Cook it while stirring it in between. After the jaggery dissolves completely, turn off the flame and keep it to cool down.
Process of making Dough
In a bowl, add 2 cups of cornmeal, ½ cup of sesame seeds and 4 tsp of ghee and mix them well. Then pour the cooled jaggery syrup in it after filtering it. Don't put it all at once, you have to save a little. Mix them well, then knead the dough. If the dough seems dry, then add the remaining syrup as well. Keep the dough slightly soft. After kneading, cover it and keep it for 10 minutes.
Process of making Tikki
Take a little oil in your hand and mash the dough lightly. Then break as big or small balls as you want to make tikkis and round them. Increase by pressing with your hand, remember not to make it too thin nor too thick. Similarly make all the tikkis and keep them on a plate.
Also you can make it with a cookie cutter. For this, break the dough and make it round in the same way and increase it lightly. Then apply some oil on the wheel and roll it lightly, remember to keep it slightly thick. Take any cookie cutter and cut it with it. Similarly prepare the rest and keep it on a plate.
Process of frying Tikki
Heat oil in a pan, oil should be medium hot and flame should be low-medium. Put as many tikkis as can come in hot oil and let them fry for 1-2 minutes. When they float to the top, turn them over and fry them till they turn golden brown. After frying, take them out and fry the rest in the same way.
In this way, the cornflour and sesame seeds sweet tikki will be ready. Serve these to both kids and adults and enjoy their taste.
Suggestions
After cooling down completely, you can keep them in any air tight container and eat them for 15-20 days.
The flame should be low-medium while frying them. If you feel that they are getting fried slowly, then you can turn up the flame a bit.
