Shahi Gobi Kofta Curry is a very rich gravy recipe. It is quite easy to make. Whether there is a party in the house or guests are coming during the festival, you can make these vegetables on such occasions. Not only this, but if you ever feel like eating something special at home or you want to give some good news to the family members, then you can make Shahi Gobi Kofta curry and tell the news in a good and tasty way.
Ingredients for Cauliflower Kofta Curry
For Kofta
Cauliflower - 250 grams, 1
Salt - ½ tsp
Turmeric Powder - ¼ tsp
Red Chilli - ¼ tsp, crushed
Coriander Powder - 1 tsp
Green Chilli - 2, finely chopped
Ginger - 1 tsp, grated
Gram Flour - ½ cup
For Gravy
Oil - 2-3 tbsp
Bay leaf - 2
Cinnamon - 1 inch
Cloves - 4
Black Pepper - 10-12
Black Cardamom - 1
Cumin Seeds - ½ tsp
Dry Fenugreek - 1 tbsp
Tomato - 2
Green Chilli - 1
Ginger - ½ inch
Cashews - 20
Turmeric Powder - ½ tsp
Coriander Powder - 1 tsp
Kashmiri Red Chilli - 1.5 tsp
Cream - ½ cup
Salt - a little less than 1 tsp
Garam Masala - ¼ tsp
Process of making batter for Gobi Kofta
Wash ½ cup of cauliflower well and cut its flowers and dry its water. Now grate them with a small grater. After grating, add ½ tsp of salt, ¼ tsp of turmeric powder, ¼ tsp of red chilli powder, 1 tsp of coriander powder, 2 finely chopped green chillies, 1 tsp of grated ginger and ½ cup of gram flour. Now make a thick batter by mixing them well, the batter for making cabbage koftas will be ready.
Process of making Gobi Kofta
After making the batter, lift some batter out of it and make a round of it. Now in the same way, take as much batter as you want to make as big or as small koftas as you like. After this, heat oil in a pan, remember oil should be medium-high and flame should be medium.
After the oil heats up, put koftas in it and fry them for some time. Then fry them till they turn golden brown from all the sides. After they turn golden brown from all sides, take them out and fry the rest in the same way. Gobi koftas will be ready.
Process of making gravy for Gobi Kofta Curry
Put 2-3 tbsp of oil in a pan and heat it. Now put 2 bay leaves, 1 cinnamon, 4 cloves, 10-12 black peppers, 1 large cardamom peeled, ½ tsp of cumin seeds, 1 tbsp of dry fenugreek (crush and put it in) in the hot oil. Stir the spices a little, then add 2 tomatoes, 1 green chili, ½ inch of ginger and 20 cashew nuts to it. Now fry them well till they leave oil.
After stirring it a little, add ½ tsp of turmeric powder, 1 tsp of coriander powder and 1.5 tsp of kashmiri red chilli and fry it while stirring for a while. Remember, spices are to be roasted on low-medium flame. When the spices are roasted well and oil starts separating from them, then add ½ cup of cream in it. Now fry it while stirring continuously till the spices come to a boil.
When it comes to boil, fry it while stirring it for a while till it leaves the oil. When the oil separates from the spices, add 1 cup of water, a little less than 1 tsp of salt and ¼ tsp of garam masala. Mix it well, add 1-2 tbsp of green coriander and cook it covered for 2 minutes.
When the time is up, add the gobi koftas to the gravy and mix it well. Cook well for 2-3 minutes on low flame. When the time is up, Shahi Gobi Kofta Curry will be ready. Serve it with roti, naan or rice and enjoy the taste.
Suggestions
While making the kofta batter, add enough gram flour so that the cabbage starts binding well.
If the koftas start breaking while frying, then add a little more gram flour to the batter and mix. The koftas will not break.
