Ginger Chutney pickle, also known as Allam Pachadi, is a specialty of Andhra Pradesh. It is served and enjoyed with Idli, Dosa, Uttapam, or Paratha. You can prepare this pickle all at once and use it for a year. So, let us begin the preparation.
Ingredients for Ginger Chutney Pickle
Oil - 4 tbsp
Mustard Seeds - 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Dry Coriander Seeds - 1 tbsp
Split Chickpeas - 1 tbsp
Split Black Gram Lentils - 1 tbsp
Cumin Seeds - 1 tsp
Ginger - 1/3 cup / 50 gms
Asafoetida - 2 pinch
Kashmiri Red Chilli - 25 gms
Jaggery - 1/2 cup / 80 grams
Salt - 3 tsp
For Tadka:
Oil - 1 tbsp
Mustard Seeds - 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Red Chilli - 2
Curry Leaves - 10 - 12
Ginger Chutney Pickle Recipe
Heat 4 tbsp of sesame oil in the Kadai. When the oil is hot, add 1/2 tsp of mustard seeds, 1/4 tsp of fenugreek seeds, 1 tsp of coriander seeds, 1 tbsp of chana dal, 1 tbsp of urad dal, 1 tsp of cumin seeds, and roast till the dals turn brown.
Alternative: Instead of sesame oil, you can use peanut oil.
Lentils' color has changed, and spices have become aromatic. Now, add 50 grams of chopped ginger to the Kadai. Roast the ginger over medium heat till crispy.
Add 2-pinch hing and fry masala together with 25 grams of Kashmiri red chili. Switch off the stove once everything is nicely roasted and let the spices cool down.
Suggestion: If you like garlic, then you can add 8-10 chopped garlic cloves.
Add roasted spices, 80 grams of dashed jaggery, 1/2 cup of tamarind pulp, 3 tsp of salt to the food processor, and grind coarsely. Take the pickle out in a bowl and prepare Tadka.
Heat 1 tbsp of oil in the Kadai. When the oil is hot, add 1/2 tsp of mustard seeds, 1/4 tsp of fenugreek seeds, 2-dried red chili (break into halves), and fry briefly. Turn off the heat and add 10-12 curry leaves.
Add Tadka to the chutney and mix well. Andhra style ginger pickle is ready to be served. Store the ginger pickle in any container and enjoy it for 2-months without refrigerating. Refrigerate the ginger pickle and use it for a year.
