Fresh green peas and grated paneer stuffed inside the potato covering makes delicious green peas patties. We will prepare two types of patties today that you will see later in the article. So, let's get started.
Ingredients Required for Green Peas Patties
For Dough:
Potato - 6, (500gms)
Salt - 1 tsp
Black Pepper - 1/2 tsp
Sattu or Besan - 6 tbsp
Cornflour - 4 tbsp
Coriander Leaves - 1-2 tbsp
For Stuffing:
Peas - 1 Cup
Oil - 2 tbsp
Cumin Seeds - 1/2 tsp
Salt - 1/2 tsp
Ginger - 1 tsp, grated
Green Chilli - 2, finely chopped
Coriander Powder - 1 tsp
Salt - 3/4 tsp
Red Chilli Powder - 1/2 tsp
Dry Mango Powder - 1/2 tsp
Garam Masala - 1/4 tsp
Paneer - 3/4 Cup, (100 grams)
Coriander Leaves - 1-2 tbsp
Green Peas Patties Recipe
Read ahead to know the recipe for 2 types of green matar patties.
Type 1-Patties: To be deep-fried
Take 1 cup of green peas and grind them coarsely. Take a Kadai and heat 2 tbsp of oil in it. When the oil is hot, add 1/2 tsp of cumin seeds, 1 tsp of grated ginger, 2-chopped green chilies, 1 tsp of coriander powder, and sauté everything briefly.
Turn the flame low to avoid burning of spices. Add coarsely ground green peas, 3/4 tsp of salt, 1/2 tsp of crushed red chili, 1/2 tsp of dry mango powder, 1/4 tsp of garam masala, and sauté everything over the low-medium flame for 1-2 minutes.
After 2 minutes, add 3/4 cup of grated paneer, some chopped green coriander and mix well. Once aromatic, take the stuffing out in a bowl. Do not overcook grated paneer.
Alternative: You can add grated coconut instead of paneer.
Grate 6-boiled potatoes after peeling and add spices. Add 1 tsp of salt, 1/2 tsp of crushed black pepper, 6 tbsp of sattu flour, 1-2 tbsp of finely chopped coriander, and mix well.
Alternative: Use roasted chana powder, dry roasted besan, cornflour, or arrowroot instead of sattu.
Prepare the dough of the potatoes mixture and divide it into small portions. Apply oil to your hands to avoid sticking. Prepare patties big or small, any way you please.
Apply oil to your hand and make balls of the stuffing. Take a dough portion, make it round, and give it a shallow bowl shape. Add 1-stuffing ball and cover it while collecting the corners.
Add a little oil to your hand and make the ball round and smooth. Likewise, prepare all the patties balls. Heat the oil in the Kadai for frying. We need medium hot oil and medium heat to fry patties.
Drop as many patties ball in the Kadai as possible. Fry them for a few minutes without touching them. Once brown from below, turn them around carefully and fry them till golden brown.
Once they turn golden brown from all sides, take them out on a plate and fry the remaining patties similarly.
Type 2-patties: To be shallow fried
The preparation is nothing different from the type 1 patties. Give the dough a shallow bowl shape, add a stuffing ball, and cover it by collecting corners.
Apply oil to your hands to make the dough ball round and smooth. Flatten the ball between your palm and give it a cutlet shape. Similarly, prepare all the patties.
Take a flat pan and heat 2-3 tbsp of oil in it. Keep the flame medium. Add prepared patties to the pan, and shallow fry them in medium hot oil.
Turn the patties around after 4 minutes. Likewise, turn and fry the patties until golden brown from both sides. It takes 10 minutes to fry them up. Both types of matar patties are ready.
Green peas patties are ready to be served. Serve hot with green coriander chutney or tomato sauce. Everyone will love these crispy and delicious patties.
