Christmas and New year is around the corner, and the excitement to begin a new year is comparatively high this year. To double the fun, we brought you a traditional Goan recipe known as Kormola. It is a flower-like sweet prepared with refined flour and flavored with cardamom. Let's get started!
Ingredients for Kormolas:
Refined Flour - 1 Cup (150 grams)
Baking Powder - 1/2 tsp
Cardamom - 4, coarsely ground
Sugar Powder - 1/4 Cup (50 grams)
Desi Ghee - 1 tbsp + 1 tsp
Milk - 1/4 Cup
and
Oil for Frying
Kormola Recipe:
We will start by preparing the dough. Take 1 cup maida in a bowl, add 4-coarsely ground cardamom, 1/4 cup of sugar powder, 1/2 tsp of baking powder, 1 tbsp of ghee, and mix well.
Alternative: You can use Vanilla essence instead of cardamom and oil instead of ghee.
Pour 1/4 cup lukewarm milk gradually and knead a soft dough. Add 1 tsp of ghee to the dough and knead to make it soft and smooth. Cover the dough and keep aside for 20 minutes to set.
After 20 minutes, knead the dough again and divide it into 3-equal portions. Pick a dough potion, fold it into a ball, and roll the ball into a thin sheet.
Cut circles from the sheet using a cookie cutter, glass, or bowl. Take the extra dough out, bind, and use it for another batch. Take a circle and roll to make it a little thinner.
To give kormola shape, fold the circle into a half-moon, bring together the corner of the straight edge, and stick well. Twist the stuck ends to make pointed-tips. Likewise, prepare all the flower shape kormolas.
Fry the kormolas in medium hot oil over low-medium heat for 1-2 minutes without stirring. Once they come up to the surface, stir them occasionally and fry till golden brown.
When the kormolas are golden brown, take them out on a plate and fry other batches similarly. Each set of kormolas will take 10 minutes to fry up. With the prepared dough, we got 32 kormolas.
Kormolas are ready to be served. Store them in any container once cool down and enjoy them for a month or two. Everybody will love it!
