Veg Zingy Parcel Recipe in Cooker । How to make Paneer Zingy Parcel

Zingy Parcel is a distinguished snack for Kids as well as foodies. It has a triangular pocket like shape, which is filled with deliciously seasoned stuffing.
It's easy to prepare, and you would love to have it as snacks when binge-watching series on weekends. So, let's get started.
Ingredients for Zingy Parcel:
For Dough:
Refined Flour -1.5 Cup (200 grams)
Instant Active Yeast - 1.5 tsp
Sugar - 1.5 tsp
Salt - 1/3 tsp
Oil - 1.5 tbsp
For Stuffing:
Paneer - 1/2 cup, cubes
Butter - 1 tbsp
Ginger - 1 tsp, grated
Salt - 1/2 tsp
Ginger - 1/2 tsp, grated
Tomato - 1, chopped
Green Capsicum - 1/2 Cup, chopped
Yellow Capsicum - 1/2 Cup, chopped
Oregano - 1 tsp
Schezwan Sauce - 1 tsp
Tomato Sauce - 1 tbsp
How to make Paneer Zingy Parcel?
Dough Preparation:
For preparing the dough, we need instant active yeast. Take 1.5 tsp of instant active yeast in a bowl, pour 3-4 tbsp of lukewarm water, 1.5 tsp of sugar, and mix well. Cover the yeast and rest for 10 minutes.
After 10 minutes, the yeast has puffed up. Now, we will knead the dough using the activated yeast. Take 1.5 Cup of maida in a bowl, add ⅓ tsp of salt in it and mix well.
Add the activated yeast to the Maida and mix well. Pour lukewarm water gradually and knead a soft dough. Add some oil to the dough and knead for 7-8 minutes or till it becomes soft. Add some more oil to the dough once it starts sticking to your hands.
Once done kneading, apply a little oil over the dough, cover it and keep aside for 1 hour at a warm place.
Stuffing Preparation:
Melt 1 tbsp of butter in a pan. When the butter melts completely, add 1 tsp of grated ginger (or ginger paste) and sauté slightly.
Alternative: If you like garlic flavor, then after ginger, add 5-6 finely chopped garlic cloves and sauté it together with ginger.
Add 1-finely chopped tomato, ½ tsp of salt to the pan and sauté till it becomes mushy. Cover the pan and cook the tomatoes for 2-3 minutes.
[After 2 minutes]
Tomatoes have become firm, now mash them properly. Add ½ cup of chopped green capsicum, ½ cup of chopped yellow capsicum to the pan and mix well.
Now, add 1 tsp of oregano (or mix-herbs), 1 tsp of Schezwan sauce, 1 tbsp of tomato sauce, ½ cup of chopped paneer cubes to the pan, and mix well. The stuffing is ready. Allow it to cool.
Suggestion: If Schezwan sauce is not available, then add ½ tsp of red chili powder and ¼ tsp of crushed black pepper to the stuffing.
Alternative: Prepare the Stuffing for the zingy parcel as per your taste. You can add broccoli, mushroom, onion, or any vegetable you like.
Assemble Zingy Parcel:
Mix 2 tbsp of maida and 2 tbsp of semolina (Suji) on a plate. To make parcel crust crunchy, apply a little dry flour on your hand, punch and knead the dough once again.
Sprinkle dry maida over the board and roll the dough into a log. Further, divide the dough log into equal portions. Fold the cut dough portions into balls and keep them in a bowl.
Pick one ball of the dough, dust it with dry maida and flatten it between your palms. Now, roll it with a rolling pin and make it a bit thicker than chapati.
Once done, fold the dough sheet into a triangle and add 2 tsp of stuffing at the center. Apply some water at the corners of the triangle, bring the corners together, and seal them.
Likewise, prepare all the zingy parcels and put them on the baking tray. Preheat the oven at 200° centigrade for 5 minutes.
Meanwhile, add some water in the cream and whisk well. Brush the cream over the zingy parcels.
Alternative: You can use full cream milk or Malai instead of cream.
Place the tray in the oven to bake. Set the oven temperature at 200° centigrade for 10 minutes.
[After 10 minutes]
Check the zingy parcels in the oven. They have turned slightly brown. Turn the tray to the other side and bake them for another 5 minutes.
[After 5 minutes]
Take the zingy parcels out and brush butter over them. Now, cover them with a little wet towel for a few minutes so that they can turn soft.
[After 10 minutes]
Zingy Parcels have turned soft. They are now ready to be served.
Zingy Parcel in Cooker:
Pour 1.5-2 cups of salt in the pressure cooker and place a steamer rack/stand over the salt. Remove the Gasket and pressure regulator from the cooker's lid. Close the pressure cooker and preheat it over high flame for 6-7 minutes.
Take a plate that can fit inside the cooker. Grease the plate and place the zingy parcels on it.
[After 8 minutes]
Turn the flame to medium and put the zingy parcel plate on the stand inside the cooker. Close the pressure cooker and bake the parcels for 15 minutes.
[After 15 minutes]
The zingy parcels have turned perfectly golden brown, just like oven-baked parcels. Take the zingy parcel plate out from the cooker and brush butter over them.
Zingy parcels prepared from both the methods are ready to be served. Enjoy these zingy parcels with any of your favorite dips. They are soft, spongy, and delicious. You will love them.
