Traditional Handvo Recipe | Spicy Lentil Cake Recipe

Handvo is a traditional recipe of Gujrat, prepared from rice, lentils, and vegetables. Handvo is a kind of savory rice-lentil cake that is best-served as breakfast. You can serve it with any chutney or sauce.
So, let’s begin the preparation!
Ingredients Required for Handvo:
Rice - 1/2 Cup (100 grams)
Split Chickpeas (Chana Dal) - 4 tbsp (50 grams)
Split Yellow Lentils (Moong Dal) - 4 tbsp (50 grams)
Split Black Gram Lentils (Urad Dal) - 4 tbsp (50 grams)
Bottle Gourd (Lauki) - 1 Cup, grated
Ginger - 1-inch baton, grated
Carrot - 1/2 Cup, grated
Green Chilli - 2-3, finely chopped
Salt - 1 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tsp
Curd - 1/2 Cup
Lemon Juice - 1/2 lemon
Eno Fruit Salt - 1 tsp
Sesame Seeds - 1/2 tsp
Green Coriander - 1-2 tbsp
For Tadka:
Oil - 4 tbsp
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Sesame Seeds - 1 tsp
Asafoetida - 1 pinch
Curry Leaves - 15-20 leaves
Method - Handvo Recipe:
You can prepare Handvo in 2 different ways: 1) using a pan 2) bake it in the oven; either way, the Handvo will be delicious. We will prepare Handvo in both ways.
Add ½ cup of soaked rice (of any type), 4 tbsp of chana dal, 4 tbsp of Dhuli Moong dal, 4 tbsp of urad dal, and some water to mixer-blender. Now, blend the contents coarsely. Once done, transfer the rice-dal concoction to a bowl.
Suggestion: Soaked the rice for 3-4 hours. Rinse and drain the rice and discard the excess water.
Suggestion: We have washed the lentils well. The lentils are well puffed-up as we have soaked them for 4 hours.
Now, add 1 cup grated Lauki, ½ cup grated carrot, 1-inch grated ginger, 2-3 chopped chilies, 1 tsp of red chili powder, ½ tsp of turmeric powder, 1 tsp of salt, ½ cup curd, ½ lemon juice, 1-2 tbsp of green coriander to the concoction, and mix well.
Alternative: Add 1-whole lemon juice to the concoction instead of curd.
We have used only half a cup of water for preparing batter. The batter consistency should be medium thick. Next, divide the batter equally into 2-bowls.
Prepare Tadka:
Heat 4 tbsp of oil in the Tadka pan. Turn the flame low. When the oil is hot, add 1 tsp of mustard seeds, 1 tsp of cumin seeds, and 15-20 curry leaves. Turn off the flame. Our Tadka is ready.
Prepare Handvo Using a Pan:
Add 2 tsp of Tadka to the batter and mix well. Now, add ½ tsp of Eno fruit salt.
Alternative: You can add ¼ tsp of baking soda instead of Eno fruit salt.
Heat a non-stick pan. Add 2-3 tsp of tadka to the pan and spread it evenly. Pour the batter in the pan and spread it evenly as well. Cover and cook the batter for 10 minutes over low-medium flame.
[After 10 minutes]
Handvo is not yet ready. So, cook it for 2-more minutes.
[After 2 minutes]
The ends of the Handvo have become a little dark, indicating it is all-cooked from the bottom. Scrape the ends of Handvo using a spatula.
To flip the Handvo, place a thali over the pan and turn the pan upside down. With the help of a spatula, slide the Handvo back in the pan from the thali. Cover the pan again and cook Handvo for 10 minutes over low-medium flame.
[After 10 minutes]
Handvo is fully-cooked. Transfer the Handvo to the serving tray and allow it to cool. Once the Handvo is cool enough, cut it into pieces. The Handvo turned out very spongy. The Handvo cooked in the pan is all set to be served.
Bake the Handvo in the Oven:
Preheat the oven. Add 2 tsp of tadka in the batter and mix well. Now, add ½ tsp of Eno fruit salt and mix well. Take a bowl in which you will bake the Handvo. Add 2-3 tsp of tadka to the bowl and grease it well.
Pour the batter in the greased bowl and spread evenly.
Add the remaining tadka over the batter. Sprinkle ½ tsp of sesame seeds over the batter. Set the oven temperature at 200° centigrade. Put the batter bowl in the oven and bake it for 20 minutes.
We check the Handvo after 20 minutes but was not ready. So, we baked Handvo for 10-more minutes.
The Handvo takes 30 minutes in the oven to get fully-baked. Scrape out the Handvo from the bowl and slice a piece. The Handvo looks fluffy as cake.
We have prepared the Handvo from both the methods. Both the Handvos are very delicious. So, prepare this for breakfast and serve it with chutney. Your family members will love it.
