This is a recipe which is mostly made during the occasion of the Makar Sankranti.
Ingredients of Moong Dal Mangode
- Moong Dal - 1 cup (soaked)
- Potatoes - 2 (peeled and chopped)
- Coriander Leaves - 3 to 4 tbsp (finely chopped)
- Salt - 1 tsp (or to taste)
- Coriander Powder - 1 tsp
- Chilli Flakes - ½ tsp
- Asafoetida - 1 pinch
- Green Chilli - 3 to 4 (finely chopped)
- Ginger - 1 inch (grated)
How to make Moong Dal Mangode
Take 1 cup of Moong Dal, soak it for 2 hours in the lukewarm water or overnight. After soaking it, rub it between your palms to separate its peel from it. Add some more water in it so that peels start floating over it.
Shake water in so that peels come over the surface because this process does not consume the longer time. Remove the peels which are floating using your hands.
Grind it coarsely ground in the mixer after separating its peels and do not use water to grind it.
Take 2 peeled potatoes and chop them finely. Mix the chopped potatoes in Dal.
Add 1 teaspoon of coriander powder, 1 teaspoon of salt, ½ tsp of chilli flakes after grinding two dry red chillies in the mortar, 3-4 finely chopped green chillies and 1-inch of ginger julienne after grating it to the mixture.
Add 1 pinch of asafoetida, 3-4 tbsp of green coriander to it and mix all the ingredients well. Preheat Oil to fry Mangode in a wok. Add Mangodes to fry in the heated oil and the extremely heated oil is required to fry mangode. The flame should be medium-high.
Let them fry for a while then, we will flip them. They have fried from the bottom so flip them. Flip and fry them till they are golden brown. They appear brown from all the sides so we will drain them out of the oil. Fry and prepare all the Mangode likewise. It takes 5-6 minutes to fry the single round of Mangodes. Moong Dal hot mangode are ready to be served. Serve them with green coriander dip.
Suggestions
If you will soak Dal in the lukewarm water then, it expands in the period of 2 hours. You can also soak it overnight in the water.
You can also use washed dal for Mangode.
You can make Mangode without potato.
You can use ginger paste instead of grated ginger.
