Litti Chokha Recipe । Sattu stuffed Batti Chokha Recipe on Gas Stove

Crusty Litti and Yummy Chokha a recipe to be relished anytime in lunch or in dinner. You will really enjoy having it.
Ingredients for Litti Chokha Recipe:
- Wheat flour - 3 cups ( 450 gms )
- Ghee - 3 tbsp ( 40 gms )
- Sattu - 1 cup ( 125 gms)
- Green Coriander - 1/2 cup (finely chopped)
- Mustard oil - 2 tbsp
- Lemons - 2
- Green chilies - 5 to 6 ( finely chopped )
- Ginger - 2 inches (grated)
- Salt- 2 tsp ( or to taste)
- Carom seeds- 1/2 tsp
- Baking Soda - 1/4 tsp
- Pickle Masala - 1 tbsp
- Tomatoes- 4 ( 300 gms)
- Eggplant - 1 ( 300 gms)
- Boiled Potatoes - 4 ( 300 gms)
How to make Litti chokha Recipe :
For dough
Take wheat flour in a mixing bowl, add 3 tbsp ghee, 3/4 tsp salt, 1/2 tsp carom seeds, 1/4 tsp baking soda, mix all ingredients well. Add water in small portions and knead soft dough like that of paratha.2 tbsp less than 1.5 cup water is used to knead the dough. Cover and keep dough aside for 20 minutes to set.
For chokha
Take eggplant and tomatoes washed and dried well. Grease them with oil.( greasing with oil makes it more conveient to peel the skin) Then put over a net and roast over flame. Flip at intervals and roast till skin turns black.
Once roasted take out the eggplant and tomato in plate to cool, It takes 20 minutes to roast them. When it cools completely, then peel the skin.
Add boiled potatoes to the peeled tomatoes and eggplant. Mash well. Add 1 tsp salt, 2 finely chopped green chilies, 1 tsp ginger grated, 3 to 4 tbsp finely chopped green coriander, juice from 1 lemon, 1 tbsp mustard oil. Mix well. Chokha is ready.
For stuffing
Take sattu in a bowl, add 1/2 tsp salt, 1 tsp grated ginger, 1 tbsp pickle masala, 2 to 3 tbsp green coriander, 2 finely chopped green chilies, 1 tbsp mustard oil, juice from 1 lemon. Mix all the ingredients well. If seems dry add 2 tbsp water some and mix again. There should be just enough water to slightly bind it.
To make Littis
The dough is ready by this time. Grease hands with ghee, squash the dough, Break the dough into small lumps, give shape of peda. Make it hollow with thumb and fingers givin bowl shape, put 1 to 2 tsp stuffing, lift sides, close the litti. Keep in plate. Prepare all likewise.
To roast litti in a wok,
Take a heavy based wok to make the littis, Grease the wok with 1 tsp ghee. Heat until medium hot. As it is slightly hot, put the littis to roast. Cover the wok and let the litti roast for 3 to 4 minutes on low flame.
After 3 minutes check the litti. Turn it and let the other side roast for 2 to 3 minutes. Check the litti again and again and roast well until golden brown. Check it, if it is ready. It takes 20 minutes to roast litti in wok. Take out the littis in a plate.
To roast in appam pan
Put the appam maker to heat on very low flame. Grease the appam maker moulds with ghee. Arrange all the littis in its moulds. Roast the littis on low flame for 5 minutes then check.
After 5 minutes, check the littis, flip it side then pour ghee on its upper side. Cover and roast for 4 to 5 minutes. Check the litti again and again and roast well until golden brown. It takes 15 minutes to roast litti in appam maker. Take out the littis in a plate.
To roast littis in Jali stand
Put the jali over the gas cooktop, put littis on it and roast on very low flame. Check and flip the littis at regular intervals until it is golden brown in color. Litti on jali stand is roasted and ready. It roasts on Jali stand within 10 to 12 minutes. Lift the litti from Jali stand and put in ghee, take it out in a plate. It increases the taste of the litti. You can skip using ghee if not desired.
All the littis are roasted and ready. 20 littis can be made with this quantity of dough. To serve keep 2 littis in a plate, crush the littis and put ghee over it also take a bowl full of chokha and relish it.
Suggestions :
- If you prefer eatig onion and garlic then add i finely choppped onion and 4 to 5 garlic cloves and mix in the stuffing.
- You can also shallow fry the littis.
