Ingredients for Atta ki Meethi Mathari
- Wheat flour - 1.5 cup (200 grams)
- Semolina - 1/4 cup
- Ghee - 1/4 cup
- Sugar - 1/4 cup
- Sesame seeds - 2 tbsp
- Ghee - for frying mathris
How to make Wheat Flour Sweet Mathri
Heat 1/4 cup water and sugar in a wok. When the sugar dissolves completely in water, turn off the flame and let the syrup cool down a little
Take flour in a big mixing bowl, and to it add semolina, ghee, sesame seeds and mix everything really well. Now add sugar water to the flour and knead stiff and tight dough. Cover the dough and keep aside for 15 to 20 minutes to set.
Now knead the dough again until smooth and soft. Divide this dough into small lumps. Take one lump on your hand and flatten them with the other hand (you can also roll out the mathri using a rolling pin). With this much dough 20 to 22 mathris can be prepared.
Heat enough ghee in a wok. When the ghee is hot, place as many mathris as possible to the ghee and fry until they get golden brown from both sides. Fry these mathris on low flame. Drain out the fried mathris to a plate and likewise fry the rest as well.
Sweet wheat flour mathri is ready. Allow the mathris to cool down completely and then store them in a air tight container. Relish eating these scrumptious mathris whenever you want. These mathris keep good for up to 2 months.
Suggestions:
- Fry the sweet wheat flour mathris on medium-low flame until golden brown.
- If the quantity of ghee or sugar is more then the mathris can splatter while frying in the ghee.
- If the ghee is not sufficiently hot then too the mathris splatter while frying.
