Spicy-zingy kurkuri Bhindi is served with chapatti, naan or rice. In fact you can serve them as a snack/appetizer. The okra chunks are marinated with spices and gram flour and then deep fried till crispy and crunchy. Even those who don’t relish eating Bhindi will love these for sure.

Ingredients for Kurkuri Bhindi
- Okra – 250 grams
- Lemon juice – 1 tsp
- Salt – ½ tsp
- Red chilly powder – ¼ tsp
- Gram flour – 2 tbsp
- Cumin powder – ½ tsp
- Coriander powder – ½ tsp
- Turmeric powder – ¼ tsp
- Gram flour – 2 tbsp
- Chaat masala – ½ tsp
- Oil – to deep fry
How to Make Crispy fried Okra ?
Usually for making Bhindi sabzi soft and smooth okras are selected but for making kurkuri Bhindi we need to remove the seeds, so we can use okra in bigger size as well. Rinse the okras thoroughly and place them in sieve to dry completely. Now take one okra and cut off both the ends. Then slit it from center dividing into two equal halves. Now thinly slice the okra into 3 to 4 chunks. Remove the seeds from okra. Likewise cut each okra.
Take the chopped okra in one big mixing bowl and now add some salt and lemon juice to it. Mix everything really well. Now add the following ingredients to it – red chilly powder, cumin powder, coriander powder, turmeric powder and gram flour. Mix well until the okra is coated nicely.
Heat some oil in a wok or pan. When the oil is rightly hot, drop as many Bhindi as possible in the wok and fry them on high flame till they get little brown in color. Then reduce the flame and continue frying the Bhindi until they turn crispy and golden brown in color. Okra is now fried well, drain it on kitchen paper towels to remove excess oil. Similarly fry the rest.
Crispy, tangy and lip smacking crispy Bhindi is ready. Sprinkle some chaat masala and kurkuri Bhindi is now ready to serve. Serve this tempting kurkuri Bhindi with meals or have them as a snack.
Let the kurkuri Bhindi cool down completely and store them in air tight container. Relish eating for up to 2 to 3 days.
Suggestions:
- Make sure the oil for frying okra is heated rightly. Drop the Bhindi in hot oil and let it turn little brown. Then reduce the flame to low and continue frying until it gets crispy and golden brown.
