Ingredietns for Buuute ka kees
- Corn - 4 (soft, creamy)
- Milk - 1 cup
- Fresh coconut - 2 to 3 tbsp (grated)
- Green coriander - 2 to 3 (finely chopped)
- Ghee - 2 tbsp
- Green chilly - 2 (finely chopped)
- Ginger - 1 inch piece (grated)
- Asafoetida - 1/2 pinch
- Cumin seeds - 1/2 tsp
- Mustard seeds - 1/2 tsp
- Red chilly powder - less than 1/4 tsp
- Turmeric powder - less than 1/4 tsp
- Salt - 3/4 tsp (as per taste)
- Sugar - 1/2 - 1 tsp
- Lemon juice - 1 tsp
How to make bhutte ka kiss
Grate the corns and take out the pulp. Now make a paste from grated corns.
Heat some ghee in a pan. When ghee is hot, add asafoetida, cumin seed and mustard seeds. After sauteing for while, add ginger, green chilly, turmeric powder and corn paste. Stir constantly until there is slight change in color. Within 5 to 6 minutes, paste is roasted. Now add red chilly powder into it and mix well. Also add milk and sugar and mix all ingredients really well. Stir constantly until it simmers once.
After it simmers once, add salt and mix well. Cover again and cook on low flame. Stir after every two minutes. Cook the kees for 10 to 12 minutes. When the corn kees is cooked, ghee starts separating from it. Add some green coriander and 1 tsp lemon juice into it.
Corn kees is ready, Take out the kees in plate and garnish with some green coriander sprigs and grated coconut. Delicious corn kees is ready, serve and relish eating.
Suggestion:
- Instead of milky-creamy corn, sweet corn can also be used. Ground and make paste for making kees from the sweetcorn.
- Ghee can be used in place of oil.
